The Limitations of Citric Acid Solutions

For iron atoms, the formula is as follows:
Citric Acid 2(C6H8O7) + Iron 3(Fe) = C12H10Fe3O14 + 3H2
When the elemental iron or calcium becomes chemically bound to the citric acid, it is nonreactive and cannot redeposit on the surface. Therefore, it is soluble and can be washed away during a rinse cycle.
The Descaling and Stainless Steel Passivation Connection
In industrial environments, descaling and surface preservation are complementary processes. Citric acid actively chelates metal ions on ferrous surfaces like stainless steel. This reaction is the foundation of stainless steel passivation.
Citric chemistry strips away free iron atoms from the steel leaving behind a surface highly concentrated with chromium. Upon rinsing, the chromium reacts with the atmosphere forming a chromium-oxide layer that actively inhibits future corrosion and prevents new scales from easily bonding to the metal.
